I plant indoors each spring with tomatoes and melons, and I look at the leg and the leaf and become big. When danger of frost, I pass you set in the garden you with compost and mound of dirt and worms, and let you do your thing. You get wild and long and heavy, and for a moment I think of you hem you cut back, but I remember your fruits and hesitation. Once you’re cured, I bring you downstairs, and then from October through February I forget you. But mostly, I keep you plain. It seems in keeping with your character, your beliefs, your aims. I dice you up carefully, cut away your skin, and throw you into a pot to boil til you’re tender. Then I drain you, pull out a whisk, and drop in a pat of butter and a glug of maple syrup. Squash Recipes: Butternut Squash and Pumpkin Soup
1/4 Teaspoon freshly ground pepper
1. Wash pumpkin, cut off top and reserve for a lid. Scrape out seeds and fiber with a spoon. Cut squash in half lengthwise. Remove the seeds and fiber, and peel if waxed. Cut into 1/2-inch pieces and set aside.
2. Combine all ingredients in a large saucepan. Cover and boil. Reduce to simmer, and cook for 30 minutes or until squash, pumpkin, and vegetables are tender.
3. Transfer a quarter of the mixture to a blender or food processor. Carefully blend, covering blender or food processor with a towel. Repeat with remaining mixture until all is blended. Stir to blend the batches.
4. Serve hot in a large hollowed-out pumpkin or individually in mini pumpkins.
